Spring and Summer Recipes For Dinner - Easy Summer Food Ideas Tracy Metro for the Kraft Kitchens has some great dinner ideas that combine the best of Spring vegetables, colors, and wonderfully fresh tastes to celebrate the season in style. Recipe: Balsamic-Maple Glazed Ham Ingredients 1 bone-in skinless smoked ham, shank or butt end portion (7 lb.) 1/4 cup KRAFT Balsamic Vinaigrette Dressing 1/4 cup maple-flavored or pancake syrup 1 Tbsp. GREY POUPON Dijon Mustard 8 parsnips (2 lb.), trimmed, peeled and cut into 1/2-inch-wide spears 1-1/2 lb. baby carrots 3 Tbsp. olive oil Directions HEAT oven to 325ºF. Place ham, fat-side up, in foil-lined roasting pan. Score ham; cover with foil. Bake 1 hour. Mix dressing, syrup and mustard; brush 1/3 of glaze onto ham. BAKE, uncovered, 1 hour or until ham is heated through (140ºF). Brush with remaining glaze every 20 min. Meanwhile, toss parsnips and carrots with oil in large shallow baking pan. Add to oven with ham after the first 15 min. of ham baking time, stirring vegetables every time ham is brushed with glaze. TRANSFER ham to cutting board; cover loosely with foil. Let stand 15 min. Meanwhile, increase oven temperature to 425ºF. Bake vegetables an additional 15 min., stirring after 10 min. Serve with the sliced ham. Adrien Sharp for the Kraft Kitchens shares some great ideas for what to serve and how to pack up a great meal that travels. Transcript: Are you looking for new ways to spend quality time with your family? One of my favorite things to do on a nice summer day to go on a picnic. Bring a football maybe a kite and everyone gets a chance to enjoy the outdoors and each other for an afternoon. Hi I'm Adrien Sharp for the Kraft Kitchens here with some great ideas for what to serve and how to pack your next picnic. Let's start with the food. Sandwiches are the original here when it comes to food that travels but just because they're portable does not mean they have to be predictable. With just a few simple steps you can create your own masterpiece. This is the Kickn' Chicken Wrap. Perfect for eating outdoors. The kick comes from the chipotle flavored mayo and the jalapeño American cheese. All you need to do is spread your mayo on the bottom, add the cheese, next with the chicken, the lettuce and then the celery. That's all there is to it! This ones the the Tuscan Club on a ciabatta roll. It's made with shaved oven turkey breast bacon lettuce tomato and here comes the Tuscan part: sun dried tomato and basil cream cheese on the top half of the ciabatta and some Italian dressing on the bottom half. And to go with these great sandwiches I've made some terrific side salads. This one's coleslaw and it's extra crunchy with crispy crumbled bacon and chopped salted peanuts. And rounding things out we have a very easy pasta salad with rotini, vegetables, reduced-fat parmesan and to complete it, some Lighthouse Italian dressing. For the desert, the ultimate packable, pudding snacks. Now you want everything to be fresh tasting and safe to eat when you picnic so you will need a cooler. No need for a fancy one, this plastic one on wheels does the job just fine. It's all in how you pack it. You need to keep things cold but making sure things don't get all smushed together is pretty important to. Nobody likes a crushed club. So let's back up and I'll show you exactly how I packed this picnic today. On the bottom I put all the heavy stuff. You have your bottles of water, the soda and 100% juice for the kids. I even freeze a few of the juice pouches and water ahead of time to melt slowly so even at the end of the day there is still something cold to drink. Then I lay down one of these ice blankets. These do double duty by keeping things cold and separated. Salads and pudding go in next. Followed by another ice blanket. And then last, but not least, the sandwiches. Then I put the third ice blanket on the top. Now if you don't have ice blankets you can use gallon sized freezer bags and fill them with ice cubes. The key is to make sure they are sealed tightly and do not put them on top of the sandwiches. So there you have it. The great American picnic. Easy BBQ Ribs Ingredients 4 lb. pork baby back ribs 1 cup BULL'S-EYE Original Barbecue Sauce Prep Time: 10 min Total Time: 40 min Servings: 6 Instructions Cut ribs into 2-rib sections Place ribs in the Dutch oven or stockpot. Add enough water to completely cover ribs; cover with lid. Bring to boil; simmer on medium-low heat 20 min. Drain. Heat grill to medium heat. Grill ribs 10 mins. Or until done, turning occasionally and brushing generously with barbecue sauce. Tips - Serve with a hot baked potato and crisp mixed green salad tossed with your favorite KRAFT Dressing. - Cut ribs into sections as directed. Place in large microwaveable bowl. Add 1/2 cup water. PLACE ribs, bone-sides down, on grill. GRILL, uncovered, 30 min. on each side. Brush with barbecue sauce mixture. Grill 30 min. or until ribs are done (160°F), turning and brushing occasionally with barbecue sauce mixture. Tips Size-Wise - Balance this special occasion entree with smart side dishes. For example, choose a mixed green salad and vegetable. Substitute - Heat grill to low heat. Substitute 1 (3-lb.) cut-up broiler-fryer chicken for the ribs. Place chicken, skin-sides down, on greased grill. Ingredients: 20 Reduced Fat NILLA Wafers, finely crushed (about 3/4 cup) 1/2 cup flour 1/4 cup packed brown sugar 1/4 cup cold margarine 1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened 1 cup granulated sugar 2 eggs 2 Tbsp. flour 3 Tbsp. lemon zest, divided 1/4 cup fresh lemon juice 1/4 tsp. CALUMET Baking Powder 2 tsp. powdered sugar Prep Time: 25 min Total Time: 3 hr 23 min Servings: 16 servings Instructions Heat oven to 350ºF. Line 8-inch square pan with foil. Mix wafer crumbs, 1/2 cup flour and brown sugar in medium bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs; press onto bottom of prepared pan. Bake 15 min. Beat Neufchatel and granulated sugar with mixer until well blended. Add eggs and 2 Tbsp. flour; mix well. Blend in 1 Tbsp. zest, juice and baking powder; pour over crust. New York Style Strawberry Cheesecake Recipe Michele McAdoo for the Kraft Kitchens shares a recipe that's a creative spin on classic NY style cheesecake. Instead of serving with fresh strawberries, seedless strawberry jam is swirled on top of the batter for a beautiful marbled effect. Gorgeous and delicious! Ingredients 1 cup HONEY MAID Graham Cracker Crumbs 3 Tbsp. Sugar 3 Tbsp. Butter, melted 5 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened 1 cup Sugar 3 Tbsp. Flour 1 Tbsp. Vanilla 1 cup BREAKSTONE'S or KNUDSEN Sour Cream 4 Eggs 1/3 cup seedless strawberry jam Directions 1. HEAT oven to 325°F. Line 13x9-inch pan with foil, with ends of foil extending over sides. Mix cracker crumbs, 3 Tbsp. sugar and butter; press onto bottom of pan. Bake 10 min. 2. BEAT cream cheese, 1 cup sugar, flour and vanilla in large bowl with mixer until well blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust. Gently drop small spoonfuls of jam over batter; swirl with knife. 3. BAKE 40 min. or until center is almost set. Cool completely. Refrigerate 4 hours. Lift cheesecake from pan with foil handles before cutting to serve. Tips - Save 80 calories, 10 grams of fat and 6 grams of saturated fat per serving by preparing with PHILADELPHIA Neufchatel Cheese and BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream. - Substitute 1 pkg. (16 oz.) frozen fruit, thawed, drained and pureed, for the 1/3 cup jam.
