Using dates helps sweeten the sauce but the vinegar helps keep the tang for a tasty barbecue sauce. 1 small onion, finely chopped 125 mL (1/2 cup) chopped pitted medjool dates 375 mL (1 1/2 cups) strained tomato puree (passata) 45 mL (3 tbsp) cider vinegar 10 mL (2 tsp) Worcestershire sauce 2 mL (1/2 tsp) hot pepper sauce 5 mL (1 tsp) each dried thyme leaves and chili powder (may need to add these) In blender, combine onion, dates, puree, vinegar, Worcestershire and hot pepper sauces. Blend until smooth. Pour into saucepan and bring to a boil. Simmer for about 5 minutes or until thickened.

Coffee? In a BBQ sauce? Yes!! Nothing brings out the full flavour of grilled meat like a little coffee in your BBQ sauce! 2 cups (500 mL) brewed coffee 1 cup (250 mL) fancy molasses 1/2 cup (125 mL) mango or peach chutney 1/2 cup (125 mL) apple cider vinegar 1/2 cup (125 mL) ketchup 1 tbsp (15 mL) Worcestershire sauce 1 tsp (5 mL) salt 1 tsp (5 mL) chipotle hot sauce Meanwhile, in saucepan combine coffee, molasses, chutney, vinegar, ketchup, Worcestershire sauce, salt and hot sauce; bring to boil. Reduce heat and simmer for about 15 minutes or until reduced to 3 cups (750 mL).

Looking for a bold straight ahead BBQ sauce to baste your favourite grilled meat? Well this is it! 2 tablespoons bacon grease 1 onion chopped 
1 tablespoon garlic, minced 1⁄4 cup brown sugar
1⁄4 cup sugar
1⁄4 cup molasses
2 cups chicken stock 
1 quart ketchup 
11⁄2 tablespoons black pepper,
1⁄4 teaspoon cayenne pepper
2 tablespoons dry mustard
2 tablespoons lemon juice (about 1 lemon) 1⁄4 cup Worcestershire sauce 1⁄2  cup balsamic vinegar 1⁄2  cup cider vinegar Preheat oven to 300ºF. In a 3-quart Dutch oven, heat the bacon grease over low heat. Add the dehydrated onion and garlic and cook for 3 to 4 minutes. Stir in the remaining ingredients and place the sauce in the oven. Bake for 2 hours, stirring every 15 minutes. Store in an airtight container in the refrigerator.

With Maple, Bacon & Beer in your sauce - do you really need to put it on anything? This is a fantastic sauce for chicken and ribs; full of flavour it brings the summer party to your table. 8 slices bacon, diced
6 cloves garlic, minced 
2 whole jalapeno peppers, seeded and chopped 
1 small onion diced
1 honey brown lager 
½ cup Maple Syrup
¼ cup orange marmalade 
1 ½ cups ketchup 
¼ tsp cayenne pepper
1 tsp mustard powder
2 tbsp hot sauce
2 tbsp Worcestershire sauce
Salt to taste In a medium saucepan over medium heat, fry diced bacon until half cooked. Add garlic, onion and jalapeno peppers. Continue to fry, stirring until onions are tender and golden brown.  Pour beer into pan, stirring to loosen the flavourful bits on the bottom. Bring mixture to a rolling boil.  Reduce heat to medium low and continue to boil the beer mixture until it is reduced by half. Add the maple syrup, orange marmalade, ketchup, cayenne pepper, mustard, hot sauce, Worcestershire sauce and liquid smoke.  Return mixture to a boil; reduce heat to low and simmer, stirring occasionally for 15 minutes. Season with salt to taste.
