Easy Dinner Recipes - 30 Minute Quick Dinner Ideas Sometimes it's a race getting dinner on the table. Tracy Metro for the Kraft Kitchens shares two recipes that will beat the clock and allow you to make a home cooked meal in 30 minutes, or less. So, put down that delivery menu! INGREDIENTS Easy Beef and Broccoli 2 cups instant white rice, uncooked 1 Tbsp. oil 1 lb. beef stir-fry strips 2 cups frozen broccoli florets 1/4 cup hoisin sauce 1/4 cup KRAFT CATALINA Dressing 1 Tbsp. grated ginger root STOVE TOP One-Dish Chicken Skillet 1-1/2 cups hot water 1/4 cup (1/2 stick) butter or margarine, melted 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken 6 small boneless skinless chicken breast halves (1-1/2 lb.) 1 can (10-3/4 oz.) condensed cream of mushroom soup 1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream DIRECTIONS Easy Beef and Broccoli 1. COOK rice as directed on package. Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add meat; cook 3 min. or until evenly browned, stirring frequently. 2. ADD broccoli, hoisin sauce, dressing and ginger root; stir. Cover. Cook 5 min. or until heated through. 3. SERVE over the rice. Tips • If you can't find beef stir-fry strips in your supermarket, you can use any grilling steak, cut into thin strips, instead. • Substitute jarred minced ginger for the grated ginger root. STOVE TOP One-Dish Chicken Skillet 1. MIX hot water, butter and stuffing mix. 2. COOK chicken in large nonstick skillet sprayed with cooking spray on medium heat 5 min. on each side. 3. MIX soup and sour cream; pour over chicken. Top with stuffing; cover. Cook on low heat 10 min. or until chicken is done (165ºF). Tips • Substitute fat-free milk for the sour cream. Chicken and Galangal Coconut Cream Soup doesn't take long to cook. You can replace the chicken with any meat or seafood. Copy the recipe below then watch the Thai Chicken and Galangal Coconut Cream Soup video. Thai Chicken and Galangal Coconut Cream Soup "Tom Kha Gai" * ¾ cup chicken stock or plain water * 200g chicken breast (skinned) * 10g thinly sliced fresh young galangal * ½ cup coconut cream * ¾ cup coconut milk * 6g kaffir lime leaves, stem removed and torn * 10g red shallots. peeled * 40g straw mushrooms sliced, substitute with chanterelles or oysters mushrooms torn * 10 grams or 1 stalk of lemon grass bruised and sliced into 1 inch lengths * 1 tbsp coriander or cilantro leaves * 1 coriander root scraped * 1 - 2 tbsp lime juice * 1 - 2 tbsp Thai fish sauce * 10g red bird's eye chilies In a sauce pan, combine stock or water with coconut cream and coconut milk. Boil over high heat. Add the galangal, lemongrass, red shallots, chilies, coriander root and mushrooms. Add the chicken and simmer until tender. Add the kaffir lime leaves, fish sauce and lime juice and continue simmering until fragrant. Remove from heat and transfer to the serving bowl. Garnish with fresh coriander and serve. The soup should be rich and creamy, salty, sour and spicy.

Hi everyone! I'm back with a Cooking Vlog! It was Tim's birthday a few days ago. He turned 26!!!!! (He still looks like a 15 year old LOL) So for his birthday, he wanted to be in his pjs all day (which he did) and eat a delicious home cooked dinner. Now I don't cook very often. I promised him a 3 course dinner. I panicked. Luckily the dishes he choose wasn't too hard to make. BUT, I was proper sweaty and exhausted afterwards. Ladies, how do you do this everyday for your man? Hopefully from two years ago, my cooking skills have improved a little. I'm not expert. Just sharing my recipe with you guys if you wanna try. The dishes are nothing fancy. Dishes made during the vlog video: Creamy Mushroom Soup (Tim's fav type of soup) Bruschetta (he wanted to add cheese & bacon) Chicken Broccoli Pasta Bake (Tim's favorite dish) There was also cake but that was a cake mix so.... didn't think it required to be vlogged since all I added was water, oil and eggs. I hope you guys enjoy the video anyways. Ps. Poor Domo =( Pps. As if you can't feel sorry for Domo enough. He is getting neutered tomorrow... Going to give him extra TLC tomorrow and all week. Ppps. In this video, Betty demonstrates how to make her delectable Parmesan Chicken Casserole with Wild Rice recipe. This is not your typical "chicken and rice recipe." This one sings with flavor! Ingredients: 2 lb uncooked chicken breasts or chicken breast strips 10 3/4 oz. can condensed cream of mushroom soup 10 3/4 oz. can condensed cream of celery soup 10 3/4 oz. can condensed cream of chicken soup 2 cups milk 1 stick margarine (cut into chunks) 1 box Uncle Ben's long grain and wild rice (fast cooking recipe) grated Parmesan cheese to taste (I use about 1/2 can Kraft fat free grated Parmesan cheese) Cooking spray, if desired Mix the three cans of soup with 2 cups of milk and 1 stick of margarine in a saucepan. Place the saucepan over low heat as you work on the chicken. Stir the soup mixture occasionally. Now, remove all extra fat, skin, and gristle from the chicken and discard it. Cut the uncooked chicken breast meat into bite-sized chunks (or cubes). When the soup mixture is hot and smooth, start assembling your casserole. Use a large oven-proof casserole dish. I use a 10.5 inch by 14.75 inch by 2.25 inch Pyrex dish. If you don't have an oven-proof dish this large, make two casseroles with smaller oven-proof dishes and cook for a shorter time. Spray the baking dish with cooking spray, if desired. This is not necessary, because there is enough fat in the sauce from the margarine, but it might make serving a little easier. Now, pour one-half of the soup mixture into the bottom of the baking dish. Lightly and evenly sprinkle the long grain and wild rice over the top of the soup mixture. (You may set aside the seasoning mixture that comes with the box of rice. It will not be used in this recipe.) Next, place the chunks of uncooked chicken breast evenly over the top of the rice. Now, pour the remaining soup mixture over the top of the chicken chunks. Finish off the casserole by generously sprinkling the top with Parmesan cheese. It is important that you sprinkle plenty of the Parmesan cheese. Bake the casserole in an oven that has been preheated to 350 degrees. (I cover the casserole with aluminum foil, bake for about 1 hour, then remove the foil and brown the top for about 15 minutes.) You may omit the aluminum foil and cook the casserole for 1 hour and 15 minutes; it won't be quite as saucy. Serve while hot. I assure you that this will become one of your go-to entrees! It's terrific!!!

In this video, Betty demonstrates how to make a long-standing favorite in her family, Herbed-Seasoned Chicken Crunch. Made of chicken tenders, with a hint of mushroom flavor and herbed-seasoned dressing for coating, it's a real winner! Ingredients: 2 pounds fresh, uncooked chicken breast tenderloins (You may use half chicken breasts or nuggets.) meat tenderizer (no MSG), to taste freshly ground black pepper, to taste 14.75 oz. can condensed cream of mushroom soup 3/4 cup milk 1 tablespoon finely chopped onion 2 cups cornbread-style stuffing mix, crushed (I used plain cornbread-style; you may use plain or herb-seasoned-flavor.) 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley) 1 1/2 tablespoons chopped fresh sage (or 1 1/2 teaspoons dried sage) 1/4 teaspoon paprika 2 tablespoons butter or margarine, melted coking oil spray Place 2 pounds washed, fresh chicken breast tenderloins in a medium-sized bowl. Sprinkle with meat tenderizer, to taste. Grind some fresh black pepper over the chicken, to taste. Use your hands to mix the chicken and seasoning, and then set aside. In a small bowl, mix 1/3 cup condensed cream of mushroom soup, 1/4 cup milk, and 1 tablespoon chopped onion. Stir well, and set aside. Place 2 cups of stuffing mix in a gallon-sized plastic zip-lock bag. Use a rolling pin to crush the crumbs very finely. Add 1 tablespoon fresh chopped parsley, 1 1/2 tablespoons fresh chopped sage, and 1/4 teaspoon paprika to the bag. Close the bag and shake to thoroughly mix the contents. Set aside. Prepare an 8-inch by 12-inch baking pan by spraying it with cooking oil spray. Take the chicken tenders, one at a time, and dip them in the mushroom soup mixture, then into the herbed crumb minture, and place in the baking dish. Continue until all chicken pieces are in the baking dish. If you have leftover crumbs, scattter them evenly over the top. Then, drizzle 2 tablespoons melted butter evenly over the top. Bake in a 350-degree oven for 45 minutes, or until crisp and obviously done. (Chicken must be *completely* cooked!) Meanwhile, combine the remaining mushroom soup and the remaining 1/2 cup milk. Heat, stirring occasionally. Serve as mushroom gravy with the Herb-Seasoned Chicken Crunch. Delicious!!!
