Start with a fresh lime of the Tahitian variety if you can find it (more lemon shaped than round). Cut off the ends, cut it in half, remove the core, and score it. Always remember to cut your limes BEFORE you start drinking. Place half a lime into a chilled rocks glass. Add two bar spoons of superfine sugar. Muddle well using a wooden or plastic muddler.
