This was filmed using stop-motion photography. The camera takes one single frame (picture) of each motion and then all the frames are spliced together in editing. That's why it seems so choppy. It's the same way that people make Claymation films.

It's very easy to do a rough, crude job like this- anyone can do it. In fact, you don't even need a video camera. For example, the parts where he's "floating": he stands in one place, jumps, and takes a shot of himself in midair. Then he moves a few inches over, jumps again, and takes another shot. Rinse and repeat. It's very simple.

This is NOT, however, the way that "Bullet Time" works in the Matrix. Bullet Time used a very complex setup of still cameras set up in patterns around the actors and controlled by computers to take photos one after the other very quickly, so it looks like the actors are moving in slow motion while the camera is spinning around them.

Also, the original song is called "Misirlou" and this version was performed by Dick Dale (the same version as in "Pulp Fiction"). It's originally a Greek folk song.
