Ju-jitsu
These are also taught in Ju-jitsu classes all over the world. Of course the safest thing is to run away from a knife attack, but if you have to defend yourself, then these methods are the best. You basically cross block it, then twist the arm to reduce their strength, and then carefully remove the knife.

First rule
Never allow anyone within 21 feet. It takes 1 second and 3 quick steps to cover that distance with a knife or any other weapon. If you see it, retreat draw covering your target, give command,if they dont comply and advance double tap to center of mass with Glock 23. If it gets close quarters hand to hand you are probably in trouble. Most bad guys train in this sort of thing and will test your resolve.
