Technical explanation:
When you pump air into the bottle, the water makes it impossible for the air to release, creating a high pressure in the bottle.
When this pressure reaches max, it pushes the cork out of the bottle, as well as the water, creating a force pushing upwards.
Dependig on the type of bottle, you can use this pressure to shoot water-rockets a long way up in the air.
