It's fake all right, but there wasn't a bike (of anykind) in the orginal.
The nearest "police car" isn't actually police car, that was edited in to this video (and the cyclist ofcourse)
In the original the "police" car chasing the bike is actually the suspect who got blocked by the trucks. Even though it is fake I find the editing job pretty impressive.

That man on the bicycle was me. The story is all wrong. I did not throw a water bottle at the car. It was actually a nitrous oxide bomb, which flew into the driver's side window. This infuriated the cops, but they started laughing so hard that the car blew up, but not before the video ended.
