  • Would like to experiment

I am a professional chef, and I'd like to try something. I'd like to take 2 similar cuts of meat and cook them, 1 with the rock salt, and the other just done up normally with a little oil and grilling. Just to see how the salt compares to nothing at all.

    • Exactly

Who cares about the camparison. Cook one up this way and if you can't tell right away that it is the best you have ever eaten, then go ahead and get scientific. I think you'll try it and there will be no doubt.

  • Hmm...

I'm not sure I agree with you. The key to a good steak is having a good cut of meat. Crappy meat can only be so good, no matter what you do to it. Though, I do agree that churrasco is awesome... we have a churrascaria here in town, and although expensive, it's a great dining experience.

  • 2 Questions

    1. Does pickling rock salt work the same?
    2. Does this work on hamburgers and other stuff?

By S.A.K.E.owner 1213207312 Reply Spam Moderate Up Moderate Down
    • Yes, maybe

I think any salt will work fine. However, if it is too fine, it might be hard to get it off the steak when you are ready to cook. I have used kosher salt, and that worked pretty well.

I would not recomend this for ground meat, but it would be great on chicken, pork, venison, squirell, or basically anything that's meat.

  • That

much salt would just dry the steak. Salt after cooking if needed.

By TurtleHunter 1212023322 Reply Spam Moderate Up Moderate Down
    • It all has to do with osmosis.

Basically, it is a brine without the liquid.

By bbarta 1218369551 Reply Spam Moderate Up Moderate Down
    • One would

Think that would be the case, but for some reason this method seems to make the steak even juicier. When i cut into the finished steak, my plate is soon a puddle of juice.

Its crazy, this method shouldn't work, but it does.

  • hey this looks great

how cooked is the steak like this, like medium, medium rare, or what?

By Go Mike 1212021828 Reply Spam Moderate Up Moderate Down
  • That's great but..

....what is the sodium content of that steak when you are done with all that salt. I am sure the steak is awesome, but I don't know if I want to eat my entire weeks sodium intake in one meal....

    • uhhhh

      just do loads of exorcise

By superant10001 1212196508 Reply Spam Moderate Up Moderate Down
    • I am not sure.

But I would say that the steak also has a week's worth of flavor.

By cobbler 1212019827 Reply Spam Moderate Up Moderate Down
    • Flavor doesn't keep me full....

...food does, and if I have to ration out my sodium intake, just like calories, fat, sugar, carbs etc.... then I can't put 2000 mgs of sodium in one meal... there are plenty of other ways to make a steak great without that much salt.... beef has a naturaly good flavor if, like Sharon Bone stated, you have a good cut of meat to begin with....

    • The added amount of sodium is marginal.

I think that if we were to examine the amount of sodium added by this process we would find that there would hardly be an increase. Just like how deep-frying only adds a slight amount of fat to food.

By bbarta 1218369788 Reply Spam Moderate Up Moderate Down
    • oh for petes sake, stfu

no one cares about your low sodium diet. A health nazi usually isnt going to eat steak anyways. The rest of us dont need your diatribes about sodium tyvm

By Darkseraf 1212094442 Reply Spam Moderate Up Moderate Down
    • I am not a health nazi..

...quite the opposite. I eat steak several times a month, that is why the sodium is a big deal. If this truly is the best way to cook a steak, I would like to try it, but if it has a ton of sodium in it, then I would choose not to. My original post was a simple question that he could not answer and he responded with some sarcasm, which I replied to... nobody gives a S**t about you. You are meaningless. You are not important to anyone and nobody here was talking to you anyway....

By COPLAND1 1212104101 Reply Spam Moderate Up Moderate Down
    • It shouldn't

It tastes so good because of the bio-chemical reaction, and it can't break the salt into small enough pieces to go through the skin of the meat too fast, especially in 15 minutes. In fact, I think that at most it has near 250 mgs of sodium.

By S.A.K.E.owner 1213207891 Reply Spam Moderate Up Moderate Down
    • I suppose

there is also the question of how much sodium is absorbed by the body. I don't know about the molecular makeup, but I would say that most of what I eat comes out the other end.

    • well

idk how you'd compare unless u mean mass which is too geeky for me to do lol

By superant10001 1212196634 Reply Spam Moderate Up Moderate Down
    • I'm just saying that

I am sure that most of what I eat never becomes a part of my body. I have probably already eaten my weight in salt by now, but its not all there anymore.
