    Chinese stir fry is like having a piece of steak just well done on the outside & the inside is just barely cooked to preservered its original flavor. The secret is HIGH flame at most of the time and constant stirring to prevent it from sticking or burnt from the pan or wok. Cooking oil helps a little but constant stirring by shaking the wok back and forward do help a lot.
