The Rohu or Labeo Rohita, a river carp is gutted from the dorsal part of the fish for Maskoof, a popular BBQ in Iraq. Note the dexterity of the lady with the razor sharp knife splicing the fish open from the back, neatly seperating the rib cage bones from the vertebrae, then the cleaver takes over and in an average of three precision cuts, splices the skull and then the gutter spreads it open to remove the viscera in a single flourish. There are very efficient factories in Myanmar processing in this style.
