Chefs who brine turkey before roasting say it's a technique that makes the bird more moist and tender. If you're curious, here's Scott Cutaneo, chef-proprietor of the four-diamond, (AAA) Le Petit Chateau in Bernardsville, N.J., to show you, step-by-step, how to brine a turkey.

This really works. I brined the Thanksgiving turkey last few times it was my turn to host, and had the whole family over, and everyone loved the extra tender and moist turkeys. Now I do it nearly every time I roast a chicken or make some chicken breasts on the grill, too. There are plenty of variartions you can do too...you can add some fruits and juices, soup stock, herbs, lemon, lime, OJ, Apple Juice, some liquors, etc.
