You need to use a better knife! One with teeth on it. The smooth blade is no good. I also prefer to 'peel' the sides first before quartering, it makes for less waste if you do more, thin slices. If there are any peel remains, I pick them out with the end of a potato peeler (just like taking the eyes out of a potato).
