    you build water and dissolve sugar until you cant dissolve anymore. the you wait till it cools and disturb the water a lil, in this case, with a straw, and the sugar instantly crystalizes.

    I cant remember the name if it but there is a powdered chemical similar to that of the material in diapers that absorb water and expand quickly. that is probably what is being done here and his delivery method is its in the straw
