  Chewing gum is the easiest way to equalize the pressure in your ears, saving you from VERY painfull 'pops'. Especially in fighter jets where your altitude often changes very rapidly.

  In a nutshell, before somebody asks - the reason he keeps blacking out is the g-forces they are pulling are forcing the blood from his head/brain. It is why the pilot keeps telling him right before a maneuver to take a deep breath (oxygenate the brain) and flex his legs as the blood drains from the top of the body to the lower extremities the flexing makes it harder for the blood to flow into the legs thereby keeping it as close to the head as possible without a pressurized flight suit.
