Precision over speed!
I think he has a good controle. The "Chinese" character happens to be Japanese. Yes, it says Aikido. Yes, he is showing an Aikido joint-lock technique. I believe he moves slow to show how the technique is applied. I assume he could move faster, but then you wouldn't learn a thing. "Fast" is not always "Good". You can move fast to cheat if you don't know your move. You miss a target and you loose. Quality over quantity, precision over speed.

That's not Jujitsu. It's Aikido. Look at the technique, it's obvious. Besides, there's a calligraphy at the back that means the meaning of Aikido in chinese.
