The stupid music starts just as he's telling us what he's adding to the milk so his speech gets drowned out. It looks like washing-up liquid but that's a guess because the guy doing it is inaudible.

The detergent attacks the fat in the milk and that makes the milk more "friendly" to the water-soluble food coloring, causing a convection effect.

This is true throughout the water volume, but the surface molecules do not have molecules on all sides. This causes the molecules to be bonded in a more uniform fashion at the surface.
