-Vertical spin:
When you spin a BOILED egg, its solid inside, so it spins as ONE object.
When you spin a RAW egg, the insides of it are still in liguid-ish form, so that messes with the balance of the whole egg itself. (the inside of it keeps moving left and right because it is not solid, so it doesnt let the egg spin on a fixed point)
Stoping/releasing >>still spinning:
The BOILED egg stops after you stop it with your finger, because it is solid, and as I said before, it spins as ONE object, so if you stop it, it stops completely. Now, the RAW egg, is still liguid-ish in the inside, so when you spin it, the material inside, catches up with the speed, and spins SEPARATELY from the outside! When you stop the RAW egg, the mentioned "material" still keeps spinning inside the egg, so it functions like an "engine": after you release your finger, the insides will continue spinning (because only the outside was stopped) and that makes the egg move.
The Slicing:
As I mentioned before, the BOILED egg is solid, so when you cut it, it's like slicing bread (for example), and when the knife goes deeper, the insides of the BOILED egg allows the knife to cut its way through.
At the mean time, the RAW egg doesn't have this advantage, because its not solid inside. So when we try to slice the RAW egg, it just simple crashes.
There is also another explanation for this:
If you have a room filled with water (lets say the room can expand and contract by moving the walls) and push one of the walls towards the center of the room, then the pressure aplied to the wall, (lets say 1000Newtons) then THAT force will act on the water, but since liquids are not compressable, it will push each wall away with 1000Newtons. And this means, that when we try to slice the egg, we are not only applying pressure on the side we want to cut through, but also all the other sides (from the inside to the outside), and THIS might be the reason why we cant slice the RAW egg in an acurate way.
