A lovely pool of cheesecake rests atop a rich, dark chocolate cookie base! With one bite, you will be over the moon! The sweet cheesecake is studded with mini chocolate chips; and, for the base of the cookie, I modified my secret brownie recipe, which uses dark, rich 60% cocoa for a wonderful and rewarding chocolate flavor! The combination is so delicious. I was looking for one more way to showcase the wonderful taste of Philadelphia Cream Cheese in cheesecake and came up with these. They are out of this world! Be careful, our taste testers have found that they can send you into orbit, so hang on tight when you take your first bite! I hope you enjoy!
