ok i can't seem to get the inbetween parts figured out..how long do you keep the solution in your fridge , how long do you keep it out after its in the fridge and how long do you heat ...???help please..also any info on a good , easy and safe way to make sodium acetate..i have found a bunch of different methodds but none with FULL instructions...

Only now dealing with solid and not liquid, be careful how you warm it up (you want it to melt, not to burn)
You should try to remelt it back in the pan with a little bit of water so that you don't go over boiling temp.
I think this enters the cases of metastability. Only this product seems to be fairly stable.
Metastability is much harder to achieve with water but it's much faster and it would probably make a cool video :)
I was wondering while watching this video if anyone would know that it was a supersaturated solution. :)

Wouldn't putting it in the fridge cool it down too fast? Every time I've done it, I've had to wrap it in foil to prevent it from cooling down too fast...

What happens with sodium acetate? Why does it crystalize?
Heat it carefully and slowly in the Microwave, just like those bags, its the exact same fluid.
It crystalizes because, in the heated water you can add more sodium acetate then you could on the cooled down water.
So in the cooled water there's too much sodium acetate.
When touching with your finger (or pushing that metalthing inside the heating bag) you provide it a nucleationsite, where it can start crystalizing.

By the hard 1180530189The proces of solidifying is startet by nukleation (or nucleation ? what's it called in english?).
It builds crystals on the nucleationsite, and then other crystals form on the ones already existing, the nucleation process keeps on going.
Should also work with a piece of wood or something. But the glass surface is to "clear" to provide a nucleationsite.
nuclation is the prosses of seporating a solution of fluids via extreamly small hols on a reactant like mentos and soda
