I think your right, because a magnet wouldn't work on an old fashioned spring powered wind-up clock or watch. All the time pieces he uses have one thing in common, they use batteries.

It has to do with the magnet messing up the electronics of the watch itself. Exactly why it messes with the electronics I will have to take an educated guess at. Memory is sometimes stored by using magnetic particles suspended in various materials(old style floppy comp disks/old audio cassete tapes and also vhs-beta video tapes/the black strip on the back of a credit card) and a strong mag can literally pull (rearange small magnetic particles) the memory right off. I doubt that is what is happening here though as I see no reason for anything like that in a watch/clock (except for possibly a digital watch with some kind of memory. My guess is that it interferes with whatever microchip is in the time piece. It is probably doing this in one of two ways. It is either causing a short circuit in the chip, or is otherwise causing the electricity in the chip to resist going where it is supposed to. A magnet which moves over a conductor(I.E. the metal circuit of the microchip and anything else made of metal in the watch/clock) causes electricity to flow in said conductor. (I almost said that it created electricity in the conductor but that would not be technicaly true, that would be a whole different discusion though) This can cause a build up of voltage that can cause a small ark(a spark) of electricity to make a conection between two places in the watch where there should not be two connections, which can if you will excuse my technical jargon "mess it up". I dont think that is the explanation though with this case. If the magnet is being hidden in the persons hand then it is obvious that it is not moving very fast which is necessary to cause any kind of electrical reaction. Of course the magnet does not have to be moving if instead the conductor is moving. There may have been tiny gears moving at high speed in the watch which could have caused a reaction if they moved fast enought around a stationary hand held magnet. It is my understanding though that a lot of tiny spinning gears are a thing that is mainly to be found in old fashioned wind up spring type watches rather than modern electronic clocks/watches. Of course there is always the possibility that the individual does not have just a magnet in his/her hand but instead has some kind of very small device consisting of a magnet and a small motor which spins the magnet very fast causing the magnetic field to move without the need of the magician to move his hand at a fast pace. There is also of course ways to make an electromagnet with a spinning magnetic field (or for that matter one whch simply turned on and off very fast causing the magnetic field to form then collapse in on itself very fast giving it motion) however I could not tell you if it could be done in a way which would make it more practicaly hidden in the hand than doing it in the ' magnet on a motor' method. Neither of these seem likely to be practical at all IMHO so Im sticking with just the simple magnet hidden hin the hand idea. The other idea I had, and this is more of an educated guess. Is that the magnetic field of the magnet itself is interacting with the magnetic field of the tiny microchip. You see magnets and electricity are sort of intertwined. moving electricity causes magnetisim, and moving magnitisim (through a conductor) causes electrical movement. (i'm trying to watch my language so as not to imply something that can lead to a theoretical scientific argument outside the scope of this reply I.E. magnetism actually creating electricity-etc.)
If you have a wire with electricity running through it then it is creating a magnetic field around the wire. A microchip is made of conductive material which has been printed onto a nonconductive material. It is printed in such a way that the electricity runs through it like a little maze going to the correct components in just the right way and in just the right order. You could think of it as just a complicated little electrical wire all twisted around in a very specific little pattern. Anyway around this little specific little complicated pattern of a wire follows a magnetic field. Magnetic fields interact with one another this is why two magnets will either attract or repel one another accoriding to how they are positioned. Anyway If you get a powerful magnetic field close to a small delicate and complicated magnetic field which flows around a small printed circuit(i.e. a microchip) then it is going to most definately effect it. I do not know enough about the specifics of the effects but I might guess that it could possibly cause an effect similiar to a resistor as it might cause the electricity to actually resist going where it is supposed to go and might cause a change in current and/or voltage. An analogy of current vs voltage is kind of like the water in a pipe. The higher the voltage is similiar to the water pressure in a pipe, where as current is more akin to how much water is flowing from a pipe. Think of the water in a small pipe flowing out of it at a very high pressure sort of like when you put your finger over the hole in the end of a garden hose and it shoots out with more pressure. More pressure is like more voltage. Current is more akin to how much water is physically flowing. water flowing from a small pipe above your head at a low pressure would not be very intimidating. If instead of a small pipe it was huge pipe with a ten foot wide hole then the amount of water flowing out of it onto your head would be much more frightening even though it would be flowing out at the same low pressure as before. There would be so much of it it would overwhelm you. This would be the same as a wire with low voltage but a very high current.
Anyway the effects the magnetic field might have on the watch/clock could be various according to differing variables about the construction of the watch/clock. It could just mess up the circuit to the point that it would make it stop alltogether. Another thing that seems like a definate probable effect is that it would effect the timing of the clock/watch. Many electronic devices use quartz crystals to regulate how fast the watch/clock moves. Ok I'm moving into some hazy memory here of a Mr. Science episode I watched 20+ years ago so give me some leniancy, but as I remember quartz crystals will vibrate at a specific rate when a specific amount of voltage is put on them, so it would go to figure that if you mess with the voltage you might mess with timing of a watch or clock. This might be why the clocks/watches seemed to move extra fast when the (hidden in hand) magnet got near. It might be possible to get a complicated variety of effects depending on how you held or moved the magnet. The most probable effects however are likely to be the ones shown it this video. My arguement here is simple.......I didnt see the watches do anything else than what they did in the video, therefore until I do the experiment myself (and guessing that using the magnet is the correct way to accomplish this magic trick) I will have to assume that this is what happens when you put a magnet next to a watch!
