    Dude, this video is copied from someone else who was showing SUPERCOOLED water.... NOT Sodium Acetate! At least entitle the video correctly! All you need to do is cool water (bottled is best) below 0oC (32oF) and then introcude some disturbance (ice crystal, shaking it, etc.) and more crystals will form instantly. Do a search for supercooled water for more videos.

    this isnt real ice. once his finger came into contact with the "water" it started to "freeze" the same thing happens with contact with metal. well the chemical is sodium acetate try looking up more vids. they will show you amazing demonstrations.

    btw. you basicly ruined the vid by squeezing out all the "ice".

    It has nothing to do with what kind of ice crystal, the water is probably distilled, and cooled beyound the freezing point of undystilled water, then the ice crystal initiate the reaction and add impurities, the same effect can be achieve with boiling water.
