    The two complex components amylose and amylopectin have a much bigger dimension than the little H2O molecules. By using pressure these little molecules are pressed into the spaces and your liquid seems to freeze. I used this effect at partys.       is what it is called, just google it. its an awsome experiment for the kids, and safe, just slightly messy. i did this for the kids and they loved it. keep them busy for hours.

  • it has to do with waters properties

    when it is at rest, the water molecules are able to bounce freely in between each other.
    When you are pushing on the starch you are forcing the starch to interact with each other and because of the shape of the molecules of starch it kinda builds a prison that traps the water and stands firm like a solid.

    When you try to get all the tiny particles to move at the same time, they crowd into each other and none of them can get through. If you give them time to go one at a time, they'll move a lot quicker.

    as i see it a bonding of solid and liquid.where as you try to compress this compound mixture its molecules also compress more to become solid like,and return to its original liquid form if pressure is not applied.
