There are 3 basic ways to separate cabbage leaves without breaking them. This is particularly important when you want you use them to encase ingredients.
Blanching them will loosen the leaves and enable you to peel them away as required. Submerge the head in a large pot of boiling water for about a minute. Remove and peel off as many leaves as you can. Repeat till you have the number of leaves you need. Or, place a cored head of cabbage in a microwave and cook on high for 3 minutes. Alternatively, freeze a whole head of cabbage for 4 hours, allow it to thaw for 1 hour then remove the leaves. They will be soft and pliable without needing to be blanched or steamed.
