Green Egg Trick is an example of fun kitchen chemistry to turn egg white green with a red cabbage juice.In Green Egg Trick we arev demonstrating that red cabbage juice acts as a pH indicator. When neutral the cabbage juice is a purple colour, turning red for an acid or green and blue for a base or alkali.

PH Indicator.
The Cabbage juice can be used to measure acid or base levels of a liquid. Since the egg is somewhat basic, the color turns green. For acids it will turn purple, then red. For bases it will turn green, then yellow. For neither (pure water) it will turn blue.

  Slightly sweet - very odd! The cabbage juice was reduced to make the purple color intense but it also concentrated the natural sugars from the cabbage.

yup...
It turns green because cabbage juice is a natural indicator. Indicators change their colour depending on the PH of the liquid.

  It is royalty free music from SmartSound's Quicktracks library. It is called "Dance Club" and I used the variation called "Synthesize". I do not know who the composer artist is, although that info may be on the SmartSound website. Google "SmartSound Quicktracks" you will get the URL you need.
  
  If you have Adobe Premiere Pro or Premiere Elements you can download the free SmartSound plugin, it comes with 10 free tracks, of which "Dance Club" is one.
