no wonder foods cooked by experienced chefs in fancy restaurants are so expensive from the way they waste food from over-cutting.

  they aren't really wasting the food... the parts he threw out are the parts not eaten, or are not as good to eat. with the watermelon, even the red fruit next to the rind is bad tasting, so it is probably a way to ensure that you get the best part of the fruit in the quickest time
