Need help with this one.
I've bought a cordless phone, done everything as in the video, but there is one problem. The phone I bought does not have a feature of scanning between frequencies. Or perhaps I do not know how to scan through the frequencies. It is a Binatone Style 1200.

it won't work for "hundreds of miles" cuz the output power of that little phone isn't great.
about the same range as normal cordless phone range.
Taping down the keys basically sends the keytone "noise" out onto whatever channel, (frequency) you have selected. so any good wifi signal passing in range of the noise gets corrupted...

- I think...
  it works the way TV-B-Gone remote jammers work. it sends out a dirty signal on the 2.4GHz band and interfers with any other signals on that frequency and channel causing drop outs and gaps in conenctions. so actually a more proper name would be "WiFi Interferer" not jammer.

  You may be correct about the WIFI Interferer part but you are mistaken about the TV-B-GONE device.
  
  TV-B-GONE for one is not a remote jammer or interferer at all and two it does NOT work on the 2.4ghz band or any RF band for that matter. It is a IR based device and simply holds the most common IR TV codes in it memory.

only for short range of about 100 ft but for a longer range I hooked mine up to a Pringles cantenna and it works from almost a mile!
