*CHIPS & DIPS*
INGREDIENTS for Chips:
Approximately ¼ inch depth canola oil in frying pan.
6 corn tortillas.
6 flour tortillas.
Heat oil ~ med high.
Cut corn chips into triangles.
Cut Flour chips into squares.
Test heat with one chip -- if it is bubbling -- oil is ready.
Add a single layer of chips and quickly turn chips as they begin to stiffen.
When very stiff, quickly remove chips into a large bowl lined with paper to drain oil.
Add next layer of chips and repeat the process until all chips are cooked.
Turn off oil.
INGREDIENTS for Queso con Salsa:
1 can of Rotelle (diced tomatoes and jalapenos).
2 Cups grated cheddar cheese.
1 sliced green onion for garnish (optional).
Empty can of Rotelle into sauce pan and heat ~ med.
Once tomato mixture is bubbling allow to continue heating uncovered for about 5 minutes.
Add Grated cheese and mix with Rotelle.
Turn off heat.
Place in bowl, garnish with green onion, and serve immediately.
INGREDIENTS for Guacamole:
2 ripe avocados.
1 sliced green onion (optional).
¼ lemon or lime.
Arbol Chile powder to taste (1 tsp).
Tabasco to taste.
1/2 to 1 tsp garlic powder.
1 pinch of salt or more to taste.
Cracked pepper to taste.
Half avocado and score with a butter knife -- scoop out flesh into bowl and set pit aside.
Repeat with second avocado.
Add lemon juice and onion.
Mash avocado with a fork.
Add spices to taste.
Put Avocado pits in bowl to prevent browning and serve immediately.
