Banana Nut Bread

A quick bread that is easy to make. Tastes great warm, cool, or toasted. Freezes well, and travels well for mailing.

INGREDIENTS

3 cups all purpose flour
1 cup whole wheat flour
1 teaspoon salt
4 teaspoons baking powder
1/2 teaspoon baking soda

3/4 cup butter
1 cup sugar
4 eggs

4 cups mashed ripe bananas(1/2 cup more or less than 4cups works)
1 1/2 cups chopped walnuts

RECIPE

--bring butter and eggs to room temperature. Preheat oven to 350f.
grease 2 9x5 loaf pans.

--Combine flour, salt, baking powder, baking soda

--cream butter and sugar. Add eggs one at a time, and mix well. Mix in part of the flour mixture, then part of the mashed bananas. Mix in remaining flour mixture and mashed bananas. Fold in chopped walnuts.

--Pour batter into greased loaf pans, spread batter evenly into the pans.

--Bake for one hour, until a toothpick inserted into the bread comes out clean.

--Let sit for 10 minutes, then remove from the pan. Enjoy warm, room temperature, or a toasted slice.

    Yes! I would substitute the butter with smart balance, or maybe 1/2 cup vegetable oil. I have not tried yet, but I know that applesauce is used as a fat substitute for baking. Demerara sounds like a great idea! The flavor would be enhanced, and you may get a certain amount of browning that is missing from no butter. All purpose is just a basic white flour. Experiment with the flour, possible that the only difference would be a more dense loaf with oat flour? Use any nuts

    Many of our brands of butter having measurements on the wrapper. I have used a rubber spatula to scoop butter in and out of a measuring cup.
    Every once in awhile, one of the local stores will sell the ripe ones cheap. But not often enough! lol

    ok so can i cut the fat w something besides butter? like half smartbalance spread?
    and demerara sugar instead of white ok? i dont use white anymore
    i would wanna use almonds instead of walnuts...acid base thing, yeah i am nuts =)
    oh and i d/k what all purpose flour means, so equal parts organic whole wheat and unbleached white ok? i keep oat flour (among others) around too, just to mix things up

    I almost forgot the nino bananas in the video! I didn't use them, they were stiff and did not mash easily. They might have been fine, but I didn't want to find out the hard way!
