  • I havn't played ...

I havn't played around with it that much it dosn't seem to take up much ram. It scales very nicley with the number of cores so if your serious I'd invest in a 4 socket 45nm 2.66Ghz quad nehalem later this year or if your buying later 32nm octo-core nehalem.

  • The demo version I ...

The demo version I used for this rendering uses multiple cores as well, and the watermark in the middle of the rendering can be edited out easily, though a full version is obviously more capable.

  • maxwell can only ...

maxwell can only use one core by default, you have to buy multiple licenses to use more than one core. look up multy core licenses for maxwell.
if you are not using maxwell you may need to enable multi threading in the renderer options.

  • That is correct, ...

That is correct, only one CPU core is in use. While Windows will automatically use multiple CPUs/cores when running several programs, a single program by itself must explicitly use multiple CPUs/cores to benefit from them. My guess is that you have overlooked a setting which enables your 3D software to use multiple cores. It is possible, but less likely, that your software simply is not written to utilize multiple cores.
