It's just that a lot of DC-10's were replaced by more modern aircraft like the 747-400, 777, and the MD-11, which is a modernized version of the DC-10, and even that is being replaced. Trijets are falling out of favor for passenger use because there are more economical and reliable alternatives.

plus it is not always an option to switch your aircraft.

you don't need a degree in aviation to become a pilot. and no you don't always chose what plane you get to fly. if your starting out then no you don't get to chose. and you are getting a little ahead of yourself here. you don't just start out flying a 737... most pilots don't want to switch what plane they fly for many reasons. they fly in the same aircraft for years after years because it is about a year of non stop training before you can actually fly a different aircraft.
