Totally agree. I guess some people didn't know that the microwave works wonders but just want to stick to their old methods. I personally use the microwave to cook my rice. No problem at all!

any tips on how long this will keep, storage and reheating?

I'm so thrilled to be eating my favorite thai dessert in the comfort of my own home! I'll never pay full price again! I ended up using ataulfo mangoes which are very sweet and tender. I also need to play with the measurements, as this currently makes A LOT!

ya another good serving idea is to cut the mango in half like a bowl and dump the rice in it.
