Wouldn't cooking the shrimp for 7 minutes over-cook it especially that size? What i will suggest doing is cook the shrimp the same way but when cooking the sauce (thicken it) do it separately? then mix the two together? to avoid over-cooking the shrimp :D Just a suggestion ^^
