    Okay,
    I preheated the oven slightly, cut the heat and let it rise in there - got good volume in an hour or so. After stretching and dusting, I put it in a loaf pan and got a GREAT second rise. To the rim and a crown.

    Air bubbles may be larger than normal, but if I don't burn the thing, I know it will be good. Thought this might help other forgetful or impatient ones. The warm rise saved my butt.

    Well, I lost the last comment. I made this bread at Christmas and got raves - great crust! Tried it again today and forgot the "overnight" part. Oops! It's been rising an hour and I am going to bake it anyway, just to see.

    How would you make the best of this interesting experiment - any tips? A warmer rise?

    Thanks for sharing- I have been wondering how to get those varying sizes of bubbles.
    Could you tell me what temperature your water is at the beginning- cold-cold tap, or tepid? and what temp is your house at - I wonder if my 65 degree temp will be too cold?

    Normal if you didn't bang on the bottom of it to see if it's done, sounds hollow. Jim's video is great but should have shown this. I liked the way he dumped the bread out of the pan for the last part.

    I cook mine on bricks, no pan.

    GD, bread dough needs warm air or more time, not important which.

    Failed bread won't poison you, just looks funny, bash it into bits and put it in tomato soup or something.

    Find your own bread, keep trying.
