FYI Aunty belongs to the Jain faith. It is very similar to Buddhism. To put it simply, no. Paneer is made from the milk solids, the curd, after it seperates from the water content of the milk, the whey. Soy, almond, oat milk is just the essence of the grain or legume soaked in water.

I don't think it would work. It has to be actual milk so it curdles when you add acid. Soy milk, for example, might look like milk, but it's really just soy-bean juice. It doesn't have the casein to create curds.
