OK, another attempt, which turned out gangbusters. Mustard, my Cajun dry rub, slow long cook for over 12 hours (had a little problem with achieving high temps, indirect heat, in BBQ). Foil, into towels, into cooler for 6 hours. Fantastic stuff for this weekend.
