  • You make kombucha ...

You make kombucha with tea and sugar... By all means don't mention the mushroom culture which enables anyone to make it at home.

  • I'm saying that ...

I'm saying that acidic foods do not create and acidic environment. She said that acidic foods are bad, and that kombucha can help counter that and alkalinize the body... she made a mistake. Acidic food alkalnizes the body, like lemons and kombucha

  • I dont understand ...

I dont understand what you are trying to say. Are you trying to say that acidic foods alkalize the body? Or is what you mean to say is that some acidic foods will create an alkaline ash in the body, thus helping to make the body more alkaline? I know that drinking coffee creates an acidic environment with minimal benefits if you were to drink it daily, and it is not alkalizing. Can you please clarify what you mean? Thanks

  • The study to which ...

The study to which you refer is merely a researcher documenting four kombucha-related hospitalizations. Three of them had symptoms that could have occurred with any other severe allergy (people have died of peanuts & eggs; are peanuts & eggs dangerous?).

The 4th was an alcoholic presenting with jaundice after drinking 16oz/day of kombucha. Alcohol - liver problems. Take home lesson: alcoholics, don't overdose on KT.

Pick any random food or drink and there will be a small percentage of the population for whom it causes allergic reaction, nausea, vomiting, or headache. It's called allergies.

The mixture of sugar, tea, room temperature, and yeast/bacteria provides an ideal breeding ground for many micro-organisms (some pathogenic) and airborne fungi.

    Watch out for this stuff!
In a study (1997) by Srinivasan et al., they found that use of Kombucha tea in proximity to onset of symptoms and symptom resolution on cessation of tea drinking suggest a probable etiologic association.
Symptoms included side effects probably related to consumption of Kombucha tea are reported in four patients. Two presented with symptoms of allergic reaction, the third with jaundice, and the fourth with nausea, vomiting, and head and neck pain.
