By nursemich [Affiliate User] 1205788016I did eventually try the seitan recipe from Veganomicon and had much better luck. Now, I make seitan regularly and yes, I finally had my ruben sandwich. I don't particularly care for cheese(vegan or otherwise), but my ruben sandwich still turned out great. Thanks for the tip--seitan is so versitile.

The outside will get spongy if you let it boil too high for too long. You want it to simmer, not boil. The recipe for Simple Seitan in Veganomicon explains it pretty well. Hope this helps. :)

His technique with not kneading the gluten and using cheesecloth looks like a good option for making seiten. I recently made seiten and the outside was a little spongy(maybe I didn't knead my gluten long enough)
