in my not so expert opinion, what probaly happened is an accelerated version of what makes bread rise. In the reaction there is a great amount of gas released when the liquid becomes a solid, but due to the reaction rate (possibly influenced by a catalyst) The gas is trapped inside the solid, making what appears to be a gigantic marshmallow or pillow-like substance
