You can try cooking them longer, but no gaurantees. Watch for the edges to set up and the center to remain jiggly. Once that happens, they're done.

  • Ivy, I'm not sure ...

Ivy, I'm not sure how it will turn out using milk chocolate. For starters, you'd have to use a lot less sugar. I can't be certain how the milk content, as well as some of the additional emulsifiers, would effect the overall texture of the cake. Whatever you do, use a good quality milk chocolate with as few added ingredients as possible.

  • I'd imagine that ...

I'd imagine that the centers were less runny due to the higher gluten content in the AP flour. Regarding melting the chocolate and butter in the microwave, it shouldn't be a problem as long as you don't let the mixture get too hot.

ok so i just got through eating the molten cake i did and i followed your recipe, i used reg. flour instead of the cake flour and it turned out just fine, except i didnt get the extremely runny chocolate in the center like you did, mine was a little more held together? why do u think? also i wanna know does melting the chocolate and butter in the microwave differ in how the cake will turn out verses using a boiler? but overall it tasted perfect.

  • Hi Choco. Raw no, ...

Hi Choco. Raw no, rare yes. The cake gets baked to a point that the edges set up, but the center remains "molten". That being said, the eggs in the batter have been exposed to a 350 degree oven for 10 minutes, more than enough time to consider it "cooked". Hope that helps. Let me know if you need anything else.

I've always wanted to make chocolate lava cake but i have one question. since it's still runny in the center and the batter contains eggs, does it mean that cake is still raw?

Since the recipe doesn't call for a lot of cake flour, I imagine you could substitute using all-purpose flour. I'd love to hear if that works.
