Use any cream suitable for whipping (the kind of cream you would use if you were making whipped cream from a dessert) - and yes, you do need to use cream. You cannot substitute it - that's why its called ICE CREAM! ;) PLEASE NOTE: This is a HOME MADE version of ice cream. It does not contain the "anti-freeze" additives that shop bought ice cream has.
