    Use them all. At the end of the day its homemade booze. You'll enjoy drinking it and getting drunk coz you made it. We used green sour apples as they were all we could get on the trees around here. Our cider is lovely, dry taste. Like apple wine. Go with all of them or do one batch green, one batch red and one batch mixed. Then you'll know what tastes great next time.

    The only apples I can choose to make Cider are the typical sweet red, and, sour green apples from the store. I understand that if the apples are sweet, then the Cider might taste way sweeter, or to sweet to be enjoyable. Should I then use green apples?
