    the fillings are more like gyoza fillings... wanton fillings are purely made with pork and prawn with bits of chestnut to make add to the texture.. and btw wanton are not shaped like that...

    The soup does not have to have Bak Choi. It can be a few spring onions or Chinese Leaves...a bit of greenery really.
    Wonton can be boiled then drained, put in a bowl...then chicken broth proured over. This keeps the broth clear. Chicken broth is tastier.
    When making chicken broth....you skim off the excess oil when the soup comes to a boil. This way the oil will go to the centre for you to scoop.

    Doesn't this soup usually have bok choy?
    Is there a reason the wontons are cooked in the chicken broth? Will the soup become greasy if you do?

    Hi i think the cry sherry/rice wine is a form of vinegar for the food, rice wine is quite common it is basically sake, i bought some today :) but cider vinegar or malt should work fine :)
