about this technique the foot work is chum kiu is it not? by what i learned the foot work is pivoting on the heel. i see sifu wong pivoting on the ball of his feet, my question is how come he isnt pivoting on his heels?

Everyday, 100's of times. Then do it slow and light against a partner. Then faster and with more resistance. Sooner or later you'll get used to seeing an attack come from a certain angle and you can learn to deal with it. You won't be able to block everything, but you won't be helpless either. Just train a few simple things to start and build from there.
