even if the fish was dead, i felt sorry for him^^. because i'm a swiss chef, i know how to do this professional and your version is almost close to it. what counts is the result. so just a little advice: dont freeze the fish with water, it isn't good for the meat.of course its better then fry dry (:P) but the best way is to vacumate it. bad english, hope you understood. 5* 4u
