Recipe:

1 cup finely-grated carrot
1 cup milk
1/4 cup unsalted pistachios
1/4 cup raisins or sultanas
1/4 cup brown sugar
1 tbps unsalted butter
pinch mixed spice

(adjust to quantity and taste)

    You can't get a generic desert spice mix in Denmark? Quite surprising. Adding any spice to the mix is actually optional - its all about overdosing on sugar anyway, and getting one of your five daily portions of fruit and veg at the same time to offset this;)

    You really cant go wrong with this one. The worst thing you can do is under-cook the carrot and thats easy to fix anyway. I neglected to mention that you do want to cook it on a high heat so that the milk evaporates down, but turn it down at the end or you'll catch the bottom, and stir continuously towards the end.

    Wow, some recognition:D

    A bit of advice: use a few whole cardamoms instead of generic cinnamon-rich spice mix (I assume you have these in North America). The cardamom really gives it that exotic taste. Generic spice mix just makes it taste like every other desert that contains cinnamon as the main flavouring ingredient. Enjoy:D
