You can hear the music just from the stylus in the groove! (They call that "needle talk.") My turntable uses a better magnetic cartridge, which puts out a lower signal (thus requiring the pre-amp) but with much better quality.

So they use a 'pre' amplifier to get the signal from the stylus to a level that which a normal hi-fi amp can work with.
Also, there is some special equalisation that record players use, known as RIAA. This is built into the record players pre-amp.
