Maybe someday I will do another bread video with all of the steps performed live ... as opposed to ... written down in text form.

I had also realized that if anyone wanted to write down the recipe, they could easily stop the vid and make notes ... like you mentioned :-)
can you make a step by step video showing exactly what you did, if you dont mind, please?

This particular flour tho, came from a grocery chain called, The (Canada's) Superstore.
David:
1 - Let the dough continue rising in the pans until the desired height is achieved, no matter how long. Or put a cloth or plastic shopping bags over the dough to speed up its rise.
2 - Turn your oven on, to a mere 100 degrees F, put the rising pans of dough in, close the door to speed along the rising process.
After it is at the desired height, remove pans from oven (gingerly), set oven at the proper baking temp and when reached -> pop the pans back in to bake.

No sitting is required at all for the type of yeast I use.
I always add this particular yeast along with the salt straight into the flour bowl. I then mix it around and then immediately add the warm water.
But ... there is a different type of yeast out there, that needs to be mixed with warm water in a glass and sit for awhile before tossing it into the flour.
That's good stuff that it turned out real good :-)
