I don't know what red flag yeast is... but if you got it at your local supermarket... it will be fine. Look for the words Active Dry.
Ok... so cool. I loved the comments on yeast. I was a little vague in my description... but that IS part of what I love about baking. the science. thanks for all those scientific words. you have truly fed my inner nerd ;) Scott/bakerman411

Yeast size can vary greatly depending on the species, typically measuring 3--4 µm in diameter, although some yeasts can reach over 40 µm.
The yeast species Saccharomyces cerevisiae has been used in baking and fermenting alcoholic beverages for thousands of years."
Fungusa plant? LOL!
"Fungus is any eukaryotic organism that is a member of the kingdom Fungi (pronounced /ˈfʌndʒaɪ/). The fungi are heterotrophic organisms characterized by a chitinous cell wall, and in the majority of species, filamentous growth as multicellular hyphae forming a mycelium; some fungal species also grow as single cells. Sexual and asexual reproduction is commonly via spores, often produced on specialized structures or in fruiting bodies."
