  • Looks great, but I ...

Looks great, but I have one question: Why don't you butterfly the chicken first? Seems like it would be a good idea to get rid of the backbone and breastbone before cooking. Does it matter much? (That said, I have a chicken prepared using your method on my grill cooking right now. Can't wait!)

  • Yeah, I have to ...

Yeah, I have to agree about the Weber grill making food taste fantastic. I used to have one and I still remember cooking a meatloaf on it. It was amazing. The meat just soaked up that smokey flavor like there was no tomorrow. Unfortunately, I now live in an apartment and charcoal grills are forbidden (for obvious safety reasons). I have a little gas grill made by char-broil that does the job, but it'll never beat the Weber!

  • times is relative.. ...

times is relative.....i.e. how hot the coals, how much meat in the grill, ambient temp., wind, ETC. The chicken meat near the bone should be around 180f before removing from the grill.....
